They provide really good sound quality plus noise cancelling. Their noise cancelling capabilities are no match for over ear headphones like the Bose Noise Canceling Headphones 700, but they’re competent enough at muting office chitchat or any other disturbing noises.

While Apple airpods pro are a quality product, they are not a flawless. When noise cancelling is enabled they can only last 4.5 hours, which means that they won't survive a really long flight. Also, they come with a hefty price tag... But that's a sacrifice you have to make when you are buying quality products... Grab a pair, you won't regret it! ;)
